Dimattina has signed a 12-year lease for two ground-floor tenancies at 61-73 Fitzroy Street, which will include a 180sqm café serving Dimattina Coffee and a 202sqm neighbourhood deli offering premium produce and freshly prepared meals.
These venues, part of The Gild’s 65-meter premium retail frontage, are slated to open in the first half of 2028 upon the project’s completion.
Fortis is spruiking Dimattina’s commitment as a reflection of growing confidence in the precinct, anticipating the new offerings will become a local routine and a drawcard for visitors.
Paul Dimattina expressed his enthusiasm for contributing to Fitzroy Street’s renewal, stating the project aligns with his long-term vision for the area and will be an “ode to our family’s history, culture, and our love of coffee and gourmet foods.”
The Gild is a key component of the St Kilda Collective, a Fortis-led initiative uniting developers with a shared vision for Fitzroy Street’s future. This collective, which includes ERDI, Ondas, and the City of Port Phillip, is contributing to over $196 million in development activity focused on design quality, cultural engagement, and community outcomes.
Fortis has commenced main construction works at The Gild, with completion expected in the first half of 2028.
